Ingredients
- 2 Boxes of cornbread mix
- 1 Large sweet onion
- 6 slices of cooked bacon and crumble
- 1 cup shredded cheese
- 10 sliced jalapeno finely diced
- 10 inch cast iron skillet
Steps
Preheat oven to 375 Degrees F
(You may wish to lightly oil your skillet around sides)
1: Slice onion in ¼ inch slices. Layer onions in bottom of skillet and saute onions till golden brown. Without flipping onions Add 1 TBSP Olive Oil toward the end of the cooking process.
2: During this time mix the cornbread mix according to your box, or personal recipe and add in the sauteed bacon, shredded cheese, and diced jalapeno.
3: Pour mixture over top of onions and bake until golden brown 25 to 30 minutes.
4: Let cool for 10 minutes and carefully place onto a serving platter.
